A chicken Parmesan frittata Consisting of: egg whites, spinach, red onion, chopped chicken, Parmesan cheese, mozzarella cheese, pink Himalayan sea salt, and garlic powder.
10 egg whites = 170 calories
3.25 ounces of grilled chicken breast = 129 Calories
2 tablespoons of Parmesan cheese = 43 Calories
1/2 ounce of mozzarella cheese = 43 Calories
1/4 cup of Muir Glen tomato sauce = 25 Calories
1/8 cup of red onion = 8 Calories.
1 cup of spinach = 7 calories
To make this dish I sprayed a nonstick pan with a couple sprays of extra-virgin olive oil spray and placed it on a medium flame. I then sautéed some red onion until it was cooked. I then threw in the chicken, then threw in the spinach, and poured the egg whites on top. I immediately drizzled the 1/4 cup of tomato sauce on top. I sprinkled some sea salt and garlic powder on top as well.
Once I saw that the egg whites were starting to bubble a little bit, I threw it under a broiler for about seven minutes. It was not very close to the broiler by the way.
I was amazed how incredibly delicious this was.
