A chocolate banana buckwheat waffle stack topped with sliced bananas, drizzled with chocolate PB2, and surrounded by strawberries and blueberries.
This waffle stack is simply my chocolate banana buckwheat waffle recipe made in three mini waffle makers and then stacked on top of each other. I purchased the mini waffle makers at target. They are the dash brand.
Mix in a a bowl:
1/4 cup of buckwheat flour = 100 calories
1/4 teaspoon baking powder = 0 calories
1/4 teaspoon salt = 0 Calorie.
1/4 cup of club soda (or water)
1 egg = 0 Calories
1 Tablespoon unsweetened cocoa = 10 Calories
1 Banana (1/2 banana mashed in waffle 1/2 sliced on top of stack) = 105 Calories
1 egg 70 Calories.
3 Strawberries = 12 Calories
12 Blueberries = 9 Calories
Mix all the contents in the bowl except for 1/2 banana, the blueberries, and strawberries. Pour into a waffle iron and cook on high for 3 minutes
Slice other half of banana and place on top of the stack. Garnish the plate with 3 strawberries and 12 blueberries.
Drizzle 2 tablespoons chocolate PB2 mixed with 2 tablespoons of water on top of the waffle stack = 50 Calories.
