Two fried eggs over what I call brussels sprout hash (chopped leftover brussels sprouts with sautéed onion and garlic and cherry tomatoes). 274 Calories for this delicious and nutritious meal! 😍
2 Eggs = 140 Calories
5 Cherry tomatoes = 15 Calories
2 cloves of chopped garlic = 9 Calories
1/8 cup of onion = 8 Calories
5 ounces of oven roasted Brussel sprouts = 61 calories
1/2 cup of chicken stock = 3 calories
Recipe:
Chop fully cooked Brussel sprouts. Sautee the onion and garlic in a nonstick pan sprayed with extra virgin olive oil. Half way thru cooking the onion and garlic, add the cherry tomato. Once all three are cooked, add the Brussel sprouts with 1/2 cup of chicken stock. Cook until piping hot.
While you are making the Brussel sprout hash, fry two eggs in a nonstick pan with a couple of sprays of extra virgin olive oil spray. Place the fried egg on a plate and surround the eggs with the Brussel sprout hash, allowing the yokes to and some of the egg whites to be visible.
