Monte's 2 Minute Microwave Muffin Tower - 282 Calories

A chocolate oatmeal blueberry banana muffin tower. Nutritious, delicious, and gluten free! 😍

Recipe:

1/4 cup of quick oats = 75 Calories

1 Egg, banana = 70 Calories

1/2 a medium banana = 53 Calories

2 Tablespoons of chocolate PB2 mixed with water = 50 Calories

1 Tablespoon unsweetened Hershey’s special dark unsweetened cocoa = 10 calories

2 Strawberries = 8 Calories

16 Blueberries = 12 Calories

1/8 of a Start Fruit = 4 Calories

Recipe:

To make this you will need some sort of ceramic baking dish and spray the inside with one quick spray of extra virgin olive oil spray

Mix in a bowl 1/4 cup of quick oats, 1 tablespoon of unsweetened Hershey’s special dark unsweetened cocoa, 1/2 mashed banana, and one beaten egg.

Pour mixture into the dishes. Put a few blueberries on top. Microwave on high for 3 minutes. When I take the dish out of the microwave I let it cool for a few minutes. Then I take the dish in my hand wearing an oven mitt and I put a paper towel in the other hand and I turn it upside down into the paper towel it pops out very easily so I can put it on a plate right side up.

Drizzle the chocolate PB2 mixed with water on top and garnish with a slice of Star Fruit on a wooden skewer.
