Chicken satay (peanut sauce) skewers on a bed of cauliflower rice.
3 Tablespoons of PB2 mixed with 2 tablespoons of water (to make the peanut Sauce) = 75 Calories
Sea Salt, garlic Powder, and ginger powder (used in the peanut sauce)
Less than 1/2 Tablespoon of black sesame seeds = 20 Calories
5 Ounces of Chicken = 198 Calories
2 cups of cauliflower rice = 35 Calories
To cook the cauliflower rice, I sautéed and onion in a pan and once cooked I threw in the cauliflower rice in with a little chicken stock, sea salt, garlic powder, and cilantro. I just cooked it enough to get it piping hot. Then I took chicken breast chopped it up and put it on the wooden skewers and painted the chicken skewers with the satay sauce and put it on top of the cauliflower rice and sprinkled it all with black sesame seeds.
Sometimes once I paint the peanut sauce on top of the chicken breast and I grill it once again. DELICIOUS!
