To make Acorn squash, simply cut it in half, spray the flesh with the extra-virgin olive oil, season with sea salt and garlic powder, and then roast in the oven at 400° for 45 minutes. Once you take it out of the oven let it cool and then scoop out the squash put it into a bowl and mash it with a fork. So easy and delicious. Makes a great side dish.
