I usually grill eggplant in the oven or in the George Foreman grill. I love prepping eggplant so I can put them in eggplant parmesan, on a pizza, in a frittata, or just as a side dish.
To make these grilled eggplant rounds I simply slice the eggplant and place it on a cutting board. I spray both sides with extra-virgin olive oil spray and sprinkle both sides with sea salt and garlic powder. I then cook the eggplant in the George Foreman grill for 5 to 6 minutes. There is no heat setting on my George Foreman grill, I just place it in the grill for that amount of time.
