4.5 ounces of leftover chopped lean pork chop = 265 Calories.
2 carrots = 50 Calories.
1 cup of broccoli = 31 Calories.
1/4 cup of red onion = 16 Calories.
1/2 cup of chicken stock = 2 Calories.
To make this meal, I sauté onion in a nonstick pan with a couple of sprays of extra virgin olive oil spray. Once the onion is cooked, I add the pork, the cauliflower rice, and the rest of the ingredients. Cook until piping hot.
